Chilli Chocolate Chip Cookies.

I love these cookies.

As you would know if you've ever seen any of the previous incarnations of my website, I love these cookies and the recipe has been a common feature on every one. So without any further ado, here it is.

Ingredients

  • 300g plain flour
  • 1/2 tsp bicarb of soda
  • 1 tsp salt
  • 170g butter
  • 215g dark brown sugar
  • 100g granulated sugar
  • 1 tbsp vanilla essence
  • 1 egg
  • 1 egg yolk
  • 100g plain choc (chipped)
  • 100g chilli choc (chipped) (SDCF Choc Shop)

Method

  1. Sift flour, bicarb and salt and set aside.
  2. Cream butter, sugars and vanilla.
  3. Add the egg, then the yolk. Beat well to ensure egg mixed in.
  4. Stir in the dry mix and then fold in the chips.
  5. Cover dough and chill for at least 30mins.
  6. Meanwhile preheat oven to 190 °C
  7. Dollop on to a greased baking tray in small blobs and bake for ~10-12 mins until edges start to golden.
  8. Remove from oven and cool on sheet for 2 mins.
  9. Remove from sheet and finish cooling on a rack.

NB Cookies will be very gooey when first removed from the oven, but finish cooking while they cool. If you leave in the oven too long then they will go hard and dry.
